Ingredients

Scale
  • 1 lb baby potatoes (red or yellow), halved
  • 12 oz green beans, trimmed
  • 1 small red onion, cut into wedges
  • 2 tbsp olive oil, divided
  • ¾ tsp kosher salt, divided
  • ½ tsp black pepper, divided
  • 1 lb sirloin steak, cut into -inch pieces
  • 1 tsp Worcestershire sauce
  • 2 tbsp butter
  • 1 clove garlic, grated
  • 2 tsp fresh parsley or rosemary, finely chopped

Instructions

Step 1: Preheat the Oven

Preheat your oven to 450°F and position the rack about 6 inches from the heat source. Lightly spray a large baking sheet with cooking spray.

Step 2: Prep the Vegetables

In a bowl, toss potatoes, green beans, and onion with 1 tbsp olive oil, ½ tsp black pepper, and ¼ tsp salt. Spread evenly on the baking sheet.

Step 3: Roast the Vegetables

Bake for 15 minutes, tossing halfway to ensure even cooking.

Step 4: Season the Steak

In the same bowl, toss the steak bites with Worcestershire sauce, 1 tbsp olive oil, ½ tsp salt, and ¼ tsp black pepper.

Step 5: Broil the Steak

Move the veggies to the edges of the pan, making room in the center for the steak. Turn on the broiler and cook for 6-8 minutes, flipping halfway. Aim for 140-145°F for medium doneness.

Step 6: Make the Garlic Butter Sauce

While the steak cooks, melt butter in a small saucepan over low heat. Add garlic and sauté for 30 seconds until fragrant.

Step 7: Serve & Enjoy!

Drizzle the garlic butter sauce over the steak and veggies, sprinkle with fresh herbs, and serve immediately!

Notes

  • Steak Choice: Sirloin is perfect, but you can use ribeye or strip steak.
  • Veggie Swaps: Try asparagus, Brussels sprouts, or bell peppers instead of green beans.
  • Low-Carb Option: Swap potatoes for cauliflower or zucchini for a keto-friendly version.

  • Storage & Reheating: Store leftovers in an airtight container for up to 3 days. Reheat in a skillet over medium heat for the best texture.
